If you guys saw my recent Sweet Potato Almond Butter muffin recipe post, then you probably know that I’m currently living in my car. It’s something that I chose to do to save money for my upcoming move to North Park and adventure to Hawaii! There’s a lot of change happening in my life at this month and unfortunately, the student/barista/blogger budget can’t fully cover it all at once, so it’s homeless is happening…and I’m actually feeling extremely at peace.
You can read more about that here, but for now, I’ll be sharing what I ate today while living in my car – all healthy, vegan, and zero-waste. 🙂 Although it sounds impossible, it can be done!
I stocked up on a few bulk & non-packaged foods, like oats, almond butter, rice, and apples, that I could keep in my car for a few days without worrying about them going bad. I also made sure to keep my tote bag, a few cloth napkins, my bamboo utensils, 3 different size mason jars and Tupperware containers in my car to ensure I didn’t make any trash! Every step towards a sustainable world makes a HUGE difference.
Alright, now let’s just get right into the good stuff. 😉
oats in a jar
Even though I’m currently sans stove, I can still have my morning oats. 😉
To cook them, I just stopped by a local Starbucks and asked to have my thermos filled with hot water. Then, I added about a cup of oats to my mason jar and topped it off with enough of the hot water to cover them plus an extra 1/4 inch. Oats will be ready almost instantaneously, and they turn out just as creamy as they do on the stovetop, making this a perfect on-the-go comforting meal!

Gotta make the best of my first on-the-go meal, right? And almond milk makes everything 100000 times better.
microwaved sweet potato + lettuce + an apple
After running a few errands and stopping by a coffee shop for an almond milk latte, I went to Whole Foods to grab some sweet potatoes, lettuce and apples for lunch.
I cooked the sweet potato in the microwave Whole Foods provides for customers in the food court area. Before placing it in the microwave, I poked small holes allllll over it, then microwaved it in one minute intervals 8 times, rotating it every time the timer went off.
pineapple + kale smoothie
I spent the day in North Park today and was happily surprised to find that the weekly Farmers Market was going on today!
I treated myself to a delicious pineapple & kale smoothie (in my own mason jar) to get some more greens in…
golden rice + chickpea curry + garlic naan
…and I also grabbed some vegan Indian food (in my own container) from my favorite Farmers Market food stand.
Overall, perfect day filled with delicious food and NO waste! 🙂
