Back at it again with another WIAT! ? I get asked very often what I eat in a day so, these posts and my What I Ate Today videos on YouTube are a fun way to give a solid insight into my daily food intake.
I’m on a mission to include more veggies into my diet. My main goal was to include a serving of veggies in every meal, but to be honest, I completely forgot about it during breakfast! Oops!
Next time I make oats for breakfast, I think I’ll be adding some zucchini to get those veggies in. ?
oats + berries
Breakfast was super simple and so delicious! Just some stove top cooked oats with about a cup of frozen berries, bananas, hemp seeds & another messy drizzle of homemade almond butter.
- Simmer 1/2 cups of rolled oats with 1 cup of water until all the liquid has been soaked up
- Turn heat off and add in a splash of almond milk + maple syrup
Sounds a bit silly to offer a how-to on something so simple but I swear, this is the greatest oatmeal ever! Try it out!
cauliflower smoothie + spinach salad + trail mix
This was the lunch that I packed for work to get me through another busy shift.
Salad made with spinach, cherry tomatoes, tofu, purple cabbage and hemp seeds with half a lemon to squeeze on top.
Smoothie made with 1/2 a cup of cauliflower, 1 cup of frozen berries, freshly squeezed OJ from 1/2 an orange + 1 banana + a handful of ice + a splash of water.
Snacks consisted of trail mix & dates.

Buddha bowls are my favorite way to get some veggies in! They’re so easy to make and you can always customize them to your preference/what you have on hand. For this dinner, I went with roasted oil-free sweet potatoes, purple cabbage. cherry tomatoes, raw corn, spinach and avocado.

After work, E surprised me with my favorite booch and a little build your own taco set up. Although I already had dinner, I couldn’t say no to the sweet gesture, so I helped myself to one taco with Beyond Meat “Beef” crumbles, shredded lettuce, tomatoes and some guacamole. ?
These extra veggies in my meals have really been powering me through this week’s PumpUp workouts! I’ve been working with my personal trainer to up the duration of my cardio sessions and working hard to use heavier weights at the gym. So far, I’ve been loving the chance to connect with a personal trainer who is just as driven to help me reach my goals as I am!
I can’t wait to see what the next three weeks bring to the table!
