What I Ate Wednesday…featuring everything I ate on a Tuesday, LOL! I had yesterday off from work AND I went grocery shopping, so I figured it was the perfect opportunity to share some yummy meals. ?
I’m challenging myself to incorporate a serving of veggies into every major meal this week. My biggest veggie eating tip is to never let it get boring. Find creative ways to incorporate them into your dish and load up on your favs. Some of my must have veggies are cauliflower, spinach and broccoli.
I’m also aiming to hit a gallon a water every day as part of my Journey to Fit goals, so I started off my morning with 32oz of warm lemon water, per usual. I also made sure to carry around my 32oz reusable water bottle all day so I could just fill up three more times and be good to go!
Alright, now let’s get on to the yummy stuff!
cauliflower green smoothie bowl
I’ve heard about adding cauliflower into your smoothies for a while now but have been very hesitant to do so after having a less-than-great broccoli smoothie from a local juice bar. With a little inspo from my healthy eating’ roomie, I decided to JUST DO IT.
The result? One of the greatest smoothie bowls I’ve had in a looooong time.
Although I could slightly taste the cauliflower, it wasn’t overpowering. (I am pretty sensitive to taste, however! You may not even notice it! ) The cauliflower actually made the smoothie thick and creamy. It is a great option if you’re trying to go for a bit of a lower calorie or lower carb option for breakfast!
here’s the recipe:
- 1/2 cup cauliflower (use frozen cauliflower or add in 1/2 cup of ice)
- 1 ripe banana
- 1 mango
- 2 big handfuls of spinach
- splash of water
I topped it off with some frozen blueberries from last week’s farmers market run, hemp seeds, mulberries and homemade almond butter.
SO. SO. GOOD.

After a midday run and mini yoga flow, I refueled my body with a deliciously simple rice bowl. White rice + steamed broccoli + sweet potatoes are heaven sent. Topped it off with garlic powder & nutritional yeast for extra yumminess.
vanilla chia pudding w/ blueberry jam
I think I’m beginning to develop a little obsession with chia pudding. I mean, just a few days ago, I made some delicious matcha chia pudding, and now this. If obsession is what you must call it, then let it be so. Chia pudding is SO yummy!
here’s the recipe:
- 1/2 cup coconut milk
- 1.5 TBSP chia seeds
- 1/2 TBSP maple syrup
- 1/2 tsp vanilla extract
Since this needs a few hours to work its magic, I usually make it in the evening and let it sit overnight. I topped it off with some homemade blueberry jam, which I adapted from this strawberry version. ?
iced coffee w/ a shot of espresso + soy milk
Remember how I said that coffee is one of those every 2-3 weeks kinda treats? Well, today was the day. E and I had to make drive up North to drop off my precious fur baby with his family since I’ll be moving and off to Hawaii next month! (I miss her so much already but I’m so happy she’ll have a loving home until I get settled into my new spot!) It was a 6 hour round trip and we are NOT ones to even play with the idea of sleepy driving, especially on the 405 at 5pm – it was necessary.
This is my go-to coffee shop drink, always unsweetened, of course. ? I don’t like the uncertainty of not knowing what flavored syrups are/aren’t vegan and I prefer not to add artificial sweeteners into my drinks, so this is a safe drink for me!

There’s something about rice bowls that just make my soul happy.
For this one, I went with a base of brown rice and added in spinach + cherry toms + raw corn + purple cabbage + pan fried tofu + avooooooo. This was perfectly filling enough to get me through the last leg of the trip.
On the way back, I split a Clif Bar with E, and that concluded my food for the day!
Happy to say that Operation Veggies-in-Every-Meal was an epic success! ?
