Hello lovely friends! Today, I’ll be starting up a little segment on my blog that I’ve been wanting to do for a while now…What I Ate Wednesday! Every Wednesday, I’ll be sharing every single thing I eat, so get ready for tons of vegan meal ideas. 🙂
I think this is a great way to hold myself accountable to A) a consistent blog schedule and B) a healthier diet. I stick to a high carb, plant-based diet (always vegan, of course!). Although I eat clean about 80% of the time, sometimes I find myself having such busy days that I don’t even think about meal planning or cooking ahead! On days like these, I’ll just end up eating nothing all day then snack at night or eat out for breakfast, lunch and dinner if I’m really not prepared – both my body and wallet are never happy about that one!
Another awesome thing about this WIAW section is that I’ll be able to share how easy it is being vegan! Most Wednesdays are full of a 5AM shift and straight to my 6 hour yoga teacher training sessions so I’ve got to be prepared with simple, ready-to-go meals that keep me energized.
Today, however, was a mellow Wednesday. I started off the morning with 32oz of warm lemon water, then spent a bit of time finishing up my latest blog post.
I had the morning off from work, so I was able to create those epic 4-ingredient pancakes pictured above!
I plan on having a fully detailed recipe up soon for these perfect lil rounds of fluffy heaven, but for now, I’ll just tell ya that all it took to make them was 2 cups oat flour + 1.5 mashed up spotty bananas + 1 chia egg + 1 cup of water. 🙂
I topped them off with tons of fresh fruit, hemp seeds and a That’s It Fruit Bar.
Since I have that 6 hour training on Wednesday’s get ready for lots of to-go lunch box ideas!
Today, I prepped tons of goodies!
- Oil-free popcorn with nutritional yeast sprinkled on top
- Another That’s It Fruit Bar because I have a tonnnn stocked up in my kitchen
- Chopped strawberries & mango
- Quinoa Buddha Bowl w/ coconut oil roasted eggplant + bell pepper, over some shredded kale
Halfway through the training, I was craving something sweet to drink so I headed over to the student store and settled for this Health-Ade Maca Berry booch. So happy to say it was delicious! I’m always hesitant on trying new kombucha because I’ve had some that taste like straight up beer (not a fan of those at all!) but this one was very similar to GT’s Kombucha, sweet, light and bubbly. 🙂
Today was the first time in teacher training that we had to teach a mini flow in front of our peers. I spent all morning building up a ton of nerves and although it was a challenge speaking, cueing, demonstrating, breathing, etc. in front of others, it was very comforting to be surrounded by such positive energy. After we wrapped up the sequences, we had a heart-warming discussion about how we are all on the same boat, and in this for a common end goal. Sometime, I need a reminder like that to realize that I’m working myself up for nothing. There’s a lot to learn in teacher training but by no means do I need to be ridiculously nervous. Error will be made, words will be stumbled upon, cues will be forgotten, but that’s what we’re there for. To learn and grow into better yogis.
Safe to say that tons of energy was expended on this afternoon’s teacher training so dinner definitely needed to be a little extra nourishing. I heated up some leftover brown rice + chickpeas, then topped it off with spinach, tomatoes, avocado, fresh lemon juice and some more nooch! The perfect way to refuel after a demanding training. 🙂
Throughout the day, I also made sure to finish up a gallon of water and helped myself to some chocolate chip tahini cookies I made just a days ago.
Overall, it was a wonderful Wednesday full of good vibes and good eats!
